Kitfo is a delicate Ethiopian beef tartare that, while made with just a few ingredients, requires extra care and precision. It’s not something we usually order at restaurants—it’s that sensitive of a dish. But a friend insisted we try everything at Meskel, especially the Kitfo—and we’re so glad we listened. We tried Kitfo at a few other spots, but hands down, Meskel’s takes the crown. We had it on our last day in Seattle, and it was the perfect way to close out the trip. We also had the honor of
